Hernán Mole Poblano Chicken

Ingredients

• 1 1/2 cupsHEB Jasmine Rice
• 1 cupHEB Low Sodium Chicken Broth
• 1/2 packetHernán Mole Poblano
• 1 1/2 lbHEB Natural Boneless Skinless Chicken Thigh
• 2 TbspHEB Rustico Olive Oil
• 2 TbspAdams Reserve Gunpowder Rub
• 1/2 TbspSesame Seeds

Instructions

1. Cook jasmine rice according to instructions on package. 2. In a small pot, combine 1/2 packet Hernán Mole Poblano with 1 cup of chicken broth (feel free to add water or broth to achieve desired consistency). 3. Simmer and stir until smooth. Set aside. 4. In a large pan, heat olive oil over medium heat. 5. Season chicken with Gunpowder Rub and cook until internal temperature reaches 165°F and the chicken is nicely browned. 6. Serve chicken over rice and spoon mole sauce on top. 7. Sprinkle sesame seeds and enjoy!
